CURED DUCK HAM SALAD, DUCK GIZZARD AND PASSION FRUIT

INGREDIENTS (4 people)

- 1 Package cured 50 gr of duck Ham

- 1 can of duck gizzard confit

- 300 g of mix of different  kind of lettuces

- Maldon salt flakes

VINAIGRETTE DRESSING:

- 150 g of passion fruit

- 50 g of honey

- 150 cc of olive oil

- Salt and pepper

 

PREPARATION:

Slice the duck gizzards and place them on the exterior side of the plate using a ring, in order to give them a rounded shape. In the center of the plate, place the cured duck ham and inside of it, fresh leaves of the chosen lettuces.

For the vinaigrette, it is advisable to remove the seeds of passion fruit. Then, mix its juice with honey, extra virgin olive oil and a pinch of salt and pepper.

 

PRESENTATION:

Place in the center of the dish wrapped in ham salad Duck and around the outside of the dish, sweetbreads. Pour a few tablespoons of vinaigrette randomly to add color and flavor.  In the center of the plate, wrap the salad with the uned ham duch, and sorround it with the duck gizzards.
